The  Beetroot creates an exquisite smoothie that is naturally sweet and earthy.   Add beetroots to any smoothie or food and it will automatically change the color to a vibrant fuschia red.

The red color is also what makes beetroot a health-promoting, disease-preventing nutritious vegetable.  Betalains, which gives beetroot the red color provides our body with anti-oxidant defense and anti-inflammatory actions to boost our immune system.

As a source of nitrate, beetroot provides our body with a natural source of nitric oxide which helps reduce and maintain normal blood pressure.

Given all the benefits beets, it is no surprise why the recent rise in popularity is unrivaled.

Making the Smoothie

Instructions

Place ice, beet, orange,  apple, spinach, dates, and flaxseed in a high-speed blender such as Vitamix or Blendtec. Blend until smooth. Serve smoothie immediately or refrigerate for up to 1 day.

Tips

  1. If you do not have a high-speed blender, grate, or finely chop beets into small pieces to help in achieving a more pureed smoothie.
  2.  I use raw beetroots for my smoothies. Alternatively, you can make cooked beets smoothie. You can purchase the softer cooked beets or you can cook raw beets.  For cooked beet smoothie, cut the beet into large chunks, then microwave, roast or steam the beet to make it softer and easier to puree.
  3. If you cook the beet, chill it first prior to using it in a smoothie, to keep smoothie nice and chilly.
  4. Because beetroots are already sweet, adding dates is optional.  Taste the smoothie without dates, then add it and blend if you want a sweeter smoothie
  5.  Beet smoothie may be an acquired taste that you will learn to love, so you may decrease how much beets you add if you are new to using beetroot in your smoothie.
  6. The leaves that come with your beetroots should not be wasted. You may cook and enjoy it the same way as chards. It is yummy and nutritious.
